But what I discovered this past weekend is that the region is also a gourmet paradise. Baiersbronn, tucked away in the middle of nowhere, is home to an astonishing eight Michelin stars spread across several restaurants, making it one of Germany’s most unlikely culinary capitals. And it’s about 2 and a half hours from Zurich.

First Impressions

I stayed at the Traube Tonbach Hotel, a five-star property where Schwarzwaldstube is located. To be honest, the hotel itself didn’t impress me much in terms of taste — luxurious, yes, but not particularly stylish. I even laughed to myself, thinking my expectations for the restaurant might need to be lowered.

The Surprise of Consistency

Dinner, however, changed everything. From the very first greeting from the kitchen to the final dessert, the quality was constant and flawless. Meat, fish, vegetarian — every single course was executed with precision. That’s not always the case in three-star restaurants, where one dish might shine while another feels like filler. You immediately understand what’s on your plate, yet you can sense the immense preparation behind it. It’s refined without being pretentious — exactly the kind of cooking I love.

A Restaurant Reborn

The story of Schwarzwaldstube adds another layer of meaning. In January 2020, a fire destroyed the original restaurant, forcing it into a temporary home. By April 2022, the rebuilt Schwarzwaldstube reopened in a stunning modern building, elegant and full of light. Dining there now feels both rooted in tradition and refreshed by renewal.

What makes Tonbach remarkable is that it’s not a city, not a famous tourist hub — it’s a valley in the Black Forest. Yet here you find multiple Michelin-starred restaurants, including Schwarzwaldstube, making it a true pilgrimage spot for food lovers.

My weekend in Tonbach reminded me that great food doesn’t need to shock or reinvent itself.
